Peak Beef Curry
1. Marinade chunks of goat meat in curry powder for a minimum of 1 hour to a maximum of 12 hours
2. Place a medium sized pot on a stove and heat over a medium heat and heat the vegetable oil till hot. Add the onions, garlic and ginger and cook for 2 – 3 minutes and then add the bay leaf and cook for a further three minutes
3. Add the goat meat and turn the heat to medium high and cook the meat turning constantly for about about 4 minutes and then add the chili powder, salt, meat stock, water, and Peak Evaporated Milk. Bring to the boil over high heat and then turn the heat to low and then cover and turn your heat to low and simmer for 2 hours. After 1 hour add the cubed potoes cover and continue to cook. Once cooked add your hard boiled egg and cook for a further five minutes
4. After which your meat should be tender and you should have a nice thick gravy. If gravy isn't at desired thickness, remove lid and turn heat up and stir and thicken gravy till it reaches desired thickness.
